What is wrong or missing, and why

Corrections policy

A factual error in a published parameter is corrected as soon as it is confirmed, and the correction is logged here with the date and what changed. Errors that could affect a food safety decision are corrected first and logged afterwards.

Where a source has changed - a regulation amended, a guideline reissued - the change is treated as a correction rather than a silent update, because a reader who acted on the old figure deserves to be able to see that it moved.

This site does not quietly delete pages. If a product leaves the EU register its page keeps its status field, which will read Cancelled or Rejected rather than Registered.

Open gaps

These are known and unfixed at the date above.

1. 13 register entries have no publication list or producer group. The eAmbrosia detail endpoint returned a 400 or a 500 for these, mostly because the register row carries no last-approved identifier to look them up by. Their list-level fields - name, scheme, country, status, dates, file number - are present and correct; the publications section on those pages says the detail record was unavailable rather than showing nothing.
2. No product specification text. The EU register does not serve specification documents through its API, so no protected product page on this site carries the salting time, ageing minimum, breed restriction or geographic boundary from its filed specification. Those are in the linked publications.
3. The 2021 Cooking Guideline lethality tables are absent. They are images inside the PDF. Reproducing them would require transcribing a safety table by eye, and this site does not do that.
4. No EU nitrite and nitrate limits. This site publishes the US ingoing limits from 9 CFR 424.21 and 424.22. The EU equivalents live in Regulation (EC) No 1333/2008 Annex II, which was not parsed for this build. That is a real gap for a site that also covers 400 European protected products.
5. Maximum degree-hours. Not published by FSIS, so not published here. The derivation of a 900 degree-hour ceiling at 110 F is on the degree-hours page and is labelled as a derivation.
6. Two FSIS documents were retrieved from mirrors. The 2021 Cooking and Stabilization Guidelines 404 at their fsis.usda.gov paths and were taken from the North Carolina Department of Agriculture's copies of the same December 2021 files. The documents are byte-for-byte the published ones as far as can be checked, but the retrieval path is not the canonical one and is recorded as such.

No corrections have been issued yet. This site was first published on 4 September 2026. When a correction is made it appears here with the date, the page, what was wrong and what it now says.

Reporting an error

If a figure here does not match the source it cites, that is worth reporting. Use the contact form and choose the first subject. Include the page, the figure as it appears, and what the source says. Corrections that come with a citation get made faster than corrections that do not, because the work of confirming them has already been done once.

Register data is retrieved from eAmbrosia, which is itself updated continuously. The retrieval date on this build is 2026-09-04, and entries registered after that date will not appear until the next build.
