Gailtaler Speck is protected across the European Union as a protected geographical indication. What that means in practice is that a document exists - the product specification - which fixes the area it may be made in, the raw material it may be made from and the method that may be used, and that a name outside those bounds may not be used on a label.
A protected geographical indication requires that at least one stage of production, processing or preparation happens in the defined area, which is a lower bar than a designation of origin.

What this page does not have
The register records that a specification exists and where it was published. It does not publish the specification text through its API, so this site does not reproduce salting times, ageing minimums or any other production parameter for this product. Those are in the filed document, reachable through the publications above.
Buying speck
Not the protected designation
Nothing sold on Amazon carries the name Gailtaler Speck. What is linked below is speck, the product class this designation is a variety of. It is not Gailtaler Speck and it is not covered by the specification filed under PGI-AT-0192. Everything above this line describes a legal claim; the product below makes no part of it.
A dry-cured ham that is also lightly cold smoked, which is unusual: most protected dry hams are not smoked at all. Speck Alto Adige is the protected name, and the specification covers both the cure and the smoke, which is what separates it from a ham that has been smoked as an afterthought.
What to read on the label. Alto Adige is the protected name. Speck elsewhere in Europe can mean plain cured fat, which is a different product entirely.
