Buying it
Dried meat strips, and the product with the most specific FSIS guidance of anything in this list: the Compliance Guideline for Meat and Poultry Jerky is where the 0.85 and 0.91 water activity figures on this site come from. Those are limits for Staphylococcus aureus, and they were written for jerky before being applied more widely.
What to read on the label. Shelf stable jerky is dried to a water activity target. A refrigerated one has not been.
Worth repeating in a buying context: no section of 9 CFR part 319 defines this product, so in the United States the word on the front of the pack is a marketing term. The compositional statements that are regulated are the ones on the back, in the ingredient list and the nutrition panel.
