Buying it
Corned beef taken further: brined, coated in pepper and coriander, smoked and then steamed. The name comes from the same root as pastirma, but the process diverged completely, because one is air-dried raw and the other is cooked to an endpoint.
What to read on the label. Cooked and refrigerated, like corned beef. The spice crust is the identifying feature.
Worth repeating in a buying context: no section of 9 CFR part 319 defines this product, so in the United States the word on the front of the pack is a marketing term. The compositional statements that are regulated are the ones on the back, in the ingredient list and the nutrition panel.
