Cured and smoked rather than air-dried, and the family the German protected names sit in: Schwarzwaelder Schinken and Ammerlaender Schinken are both smoked. Smoking is a preservation step and a flavour step at once, and which of the two it is depends entirely on the temperature it happens at.
What to read on the label. Cold smoked and raw, or hot smoked and cooked. Those are different products sold under the same words.
