Capocollo di Calabria is protected across the European Union as a protected designation of origin. What that means in practice is that a document exists - the product specification - which fixes the area it may be made in, the raw material it may be made from and the method that may be used, and that a name outside those bounds may not be used on a label.
A protected designation of origin is the stricter of the two schemes. Every stage of production has to happen in the defined area.

What this page does not have
The register records that a specification exists and where it was published. It does not publish the specification text through its API, so this site does not reproduce salting times, ageing minimums or any other production parameter for this product. Those are in the filed document, reachable through the publications above.
Buying capocollo
Not the protected designation
Nothing sold on Amazon carries the name Capocollo di Calabria. What is linked below is capocollo, the product class this designation is a variety of. It is not Capocollo di Calabria and it is not covered by the specification filed under PDO-IT-1570. Everything above this line describes a legal claim; the product below makes no part of it.
The southern Italian name for the dry-cured neck. It is also one of the products named in the withdrawn 9 CFR 318.10 list of items that required a prescribed trichinae treatment, alongside coppa, which is the closest the United States ever came to defining it.
What to read on the label. A US-made capocollo is made under federal or state inspection to a process the plant validated. The word itself carries no compositional guarantee here.
