Crudo di Cuneo is protected across the European Union as a protected designation of origin. What that means in practice is that a document exists - the product specification - which fixes the area it may be made in, the raw material it may be made from and the method that may be used, and that a name outside those bounds may not be used on a label.

A protected designation of origin is the stricter of the two schemes. Every stage of production has to happen in the defined area.

What this page does not have

The register records that a specification exists and where it was published. It does not publish the specification text through its API, so this site does not reproduce salting times, ageing minimums or any other production parameter for this product. Those are in the filed document, reachable through the publications above.
