Orkney beef is protected across the European Union as a protected designation of origin. What that means in practice is that a document exists - the product specification - which fixes the area it may be made in, the raw material it may be made from and the method that may be used, and that a name outside those bounds may not be used on a label.

A protected designation of origin is the stricter of the two schemes. Every stage of production has to happen in the defined area.
