Prosciutto Amatriciano is protected across the European Union as a protected geographical indication. What that means in practice is that a document exists - the product specification - which fixes the area it may be made in, the raw material it may be made from and the method that may be used, and that a name outside those bounds may not be used on a label.
A protected geographical indication requires that at least one stage of production, processing or preparation happens in the defined area, which is a lower bar than a designation of origin.

Prosciutto is simply the Italian word for ham, and on its own it is a description rather than a claim. Each of those is a designation of origin, which is the stricter of the two EU schemes and requires every stage of production to happen inside the defined area.
What to read on the label. Look for the protected name and the EU designation mark, not for the word prosciutto, which any dry ham may use.
