Salame Cremona is protected across the European Union as a protected geographical indication. What that means in practice is that a document exists - the product specification - which fixes the area it may be made in, the raw material it may be made from and the method that may be used, and that a name outside those bounds may not be used on a label.
A protected geographical indication requires that at least one stage of production, processing or preparation happens in the defined area, which is a lower bar than a designation of origin.

What this page does not have
The register records that a specification exists and where it was published. It does not publish the specification text through its API, so this site does not reproduce salting times, ageing minimums or any other production parameter for this product. Those are in the filed document, reachable through the publications above.
Buying salami
Not the protected designation
Nothing sold on Amazon carries the name Salame Cremona. What is linked below is salami, the product class this designation is a variety of. It is not Salame Cremona and it is not covered by the specification filed under PGI-IT-0265. Everything above this line describes a legal claim; the product below makes no part of it.
The general word for a fermented dried sausage, and the class where the gap between the European register and US law is widest. The register carries dozens of protected salami names, each with a filed specification. In the United States, salami reaching a moisture-protein ratio of 1.9 to 1 or less is a labelling threshold rather than a definition of the product.
What to read on the label. A protected name constrains the recipe and the place. Dry or hard salami in the United States is a statement about moisture, not about method.
