Soprèssa Vicentina is protected across the European Union as a protected designation of origin. What that means in practice is that a document exists - the product specification - which fixes the area it may be made in, the raw material it may be made from and the method that may be used, and that a name outside those bounds may not be used on a label.
A protected designation of origin is the stricter of the two schemes. Every stage of production has to happen in the defined area.

What this page does not have
The register records that a specification exists and where it was published. It does not publish the specification text through its API, so this site does not reproduce salting times, ageing minimums or any other production parameter for this product. Those are in the filed document, reachable through the publications above.
Buying soppressata
Not the protected designation
Nothing sold on Amazon carries the name Soprèssa Vicentina. What is linked below is soppressata, the product class this designation is a variety of. It is not Soprèssa Vicentina and it is not covered by the specification filed under PDO-IT-0145. Everything above this line describes a legal claim; the product below makes no part of it.
A pressed dry salami, and a word that covers genuinely different products: the Calabrian version is a protected designation of origin made from specific cuts, while soppressata in the United States is a style name applied at the maker's discretion. Both are fermented and dried; only one of them is a definition.
What to read on the label. Soppressata di Calabria is a legal claim. Soppressata on its own is a shape and a tradition.
