Butelo de Vinhais / Bucho de Vinhais / Chouriço de Ossos de Vinhais is protected across the European Union as a protected geographical indication. What that means in practice is that a document exists - the product specification - which fixes the area it may be made in, the raw material it may be made from and the method that may be used, and that a name outside those bounds may not be used on a label.
