Chorizo de Cantimpalos is protected across the European Union as a protected geographical indication. What that means in practice is that a document exists - the product specification - which fixes the area it may be made in, the raw material it may be made from and the method that may be used, and that a name outside those bounds may not be used on a label.
A protected geographical indication requires that at least one stage of production, processing or preparation happens in the defined area, which is a lower bar than a designation of origin.

The word covers two products that are not interchangeable. Spanish chorizo is cured and dried and eaten as it is; Mexican chorizo is a fresh sausage that must be cooked. Both are seasoned with paprika, which is where the colour comes from, and the register protects several Spanish names including Chorizo Riojano and Chorizo de Cantimpalos.
