Chouriço de Carne de Estremoz e Borba is protected across the European Union as a protected geographical indication. What that means in practice is that a document exists - the product specification - which fixes the area it may be made in, the raw material it may be made from and the method that may be used, and that a name outside those bounds may not be used on a label.

A protected geographical indication requires that at least one stage of production, processing or preparation happens in the defined area, which is a lower bar than a designation of origin.

What this page does not have

The register records that a specification exists and where it was published. It does not publish the specification text through its API, so this site does not reproduce salting times, ageing minimums or any other production parameter for this product. Those are in the filed document, reachable through the publications above.

Buying chorizo

Not the protected designation

Nothing sold on Amazon carries the name Chouriço de Carne de Estremoz e Borba. What is linked below is chorizo, the product class this designation is a variety of. It is not Chouriço de Carne de Estremoz e Borba and it is not covered by the specification filed under PGI-PT-0159. Everything above this line describes a legal claim; the product below makes no part of it.

The word covers two products that are not interchangeable. Spanish chorizo is cured and dried and eaten as it is; Mexican chorizo is a fresh sausage that must be cooked. Both are seasoned with paprika, which is where the colour comes from, and the register protects several Spanish names including Chorizo Riojano and Chorizo de Cantimpalos.

What to read on the label. Spanish and cured, or Mexican and fresh. This is the single most important thing on the label and it is often the smallest print.
