The Spanish hams split along two axes that get confused with each other. One is the protected name, which fixes the place: Teruel, Guijuelo, Dehesa de Extremadura, Jabugo, Los Pedroches, Trevelez. The other is the breed and feeding of the pig, which is a separate Spanish quality standard and is where iberico and bellota sit. A ham can carry one and not the other.
What to read on the label. The protected name tells you where. The iberico and bellota wording tells you what the animal was and ate. They are different statements and both belong on the label.
Worth repeating in a buying context: no section of 9 CFR part 319 defines this product, so in the United States the word on the front of the pack is a marketing term. The compositional statements that are regulated are the ones on the back, in the ingredient list and the nutrition panel.
